So one of our family’s favorite recipes has been a broccoli and chicken mac and cheese – it’s simple, hides some veggies inside a beloved favorite southern comfort food, and has always been one my family gobbles up quickly!
Well, recently I didn’t have chicken thawed and was also out of broccoli, so I decided to sub ground beef for the chicken and just serve a side of green beans instead.
The results was delicious, so I wanted to share it with you all! The recipe below serves 4-6 people but I recommend doubling it, especially if you live with a bunch of hungry males like I do, haha.
First, brown 1 pound of ground beef in a skillet and drain the grease. I like to then season my meat with 1-1.5 teaspsoons of the following Southwest Seasoning:
- 1 TBSP chili powder
- 2 tsp ground cumin
- 1 tsp coriander
- 1/2 tsp onion powder
- 1.2 tsp garlic powder
- 1/2 tsp dried oregano
- 1/2 tsp smoked paprika
- 1 tsp sea salt or Himalayan salt
In a separate pan, I follow this recipe, minus the chicken! Once it’s done, I add the seasoned meat to the macaroni and cheese and have my own cleaner version of Hamburger Helper!
